The Story of Chocolate Lace begins at the turn of the 20th century in snowy Czarist Russia, where life at the court of St. Petersburg was filled with opulence for the privilidged few.
During this elegant era, Eugenia Tay and her family celebrated the first snowfall of the year by drizzling melted carmelized sugar onto the newly fallen snow. The sugar quickly cooled and hardened into crisp, lacy patterns--ready to be dipped into a waiting pan of warm, dark chocolate. The result was a special chocolate treat for the family, and a welcome gift for a few special friends.

Today Hauser Chocolatier continues the tradition of Eugenia Tay, who fled czarist Russia in 1917 and who brought with her the tradition of crisp, lacy caramel patterns covered in rich chocolate. Hauser Chocolatier makes Eugenia Tay's Chocolate Lace in limited quantities on a small machine that Eugenia herself designed -- to recreate the original lacy patterns of her childhood.
